It belongs to the mint family and is closely related to oregano. Use thyme in a medley with parsley, peppercorns, cloves, and bay leaf for a more aromatic stock of chicken or vegetable. It’s a lovely flavour when paired with rosemary, when roasting lamb or venison. Roughly a tablespoon is a substitute for a sprig of dried leaves.
